Alpha-amylase is mainly used to hydrolyze starch to produce caramel, glucose and syrup, as well as to produce dextrin, beer, rice wine, alcohol, soy sauce, vinegar, fruit juice and monosodium glutamate. It is also used in bread production to improve the dough, such as reducing the viscosity of the dough, speeding up the fermentation process, increasing the sugar content, and relieving the aging of the bread. It is used for the pretreatment of cereal raw materials in foods for infants and young children. In addition, it is also used in vegetable processing.
